Old-Fashioned Chow Chow

Did you know that Chow Chow has been enjoyed in the South for over 200 years? Commonly used as a topping on pinto beans, this relish has gained popularity as a tasty condiment for hot dogs, burgers, and pork chops. Some believe the relish was brought over by Chinese laborers while others claim it originated in France due to the word “reles” which is Old French for “something remaining” (Chow Chow is made from end of season vegetables). Regardless of its origin, Chow Chow continues to be a delicious supper component. Here’s a tasty recipe you can try at home!

What you’ll need:

  • 5 cups chopped green tomatoes
  • 5 cups chopped cabbage
  • 1 ½ cups finely chopped yellow or sweet onion (depends on the flavor you’re going for)
  • 2 cups chopped green or red bell pepper
  • ⅓ cup kosher salt
  • 2 ½ cup cider vinegar
  • 1 cup brown sugar
  • 1 tbsp yellow mustard seeds
  • 2 cloves of garlic, minced
  • 1 tsp celery seed
  • ½ tsp red pepper flakes

To make:

Combine the chopped veggies in a large kettle or bowl (do NOT use bowls made of aluminum, cast iron, or copper due as they are all reactive materials). Add the salt and mix thoroughly. Cover and refrigerate for at least 4 hours. 

Next, drain the veggies and rinse thoroughly. In a large nonreactive pot, bring vinegar, sugar, seeds, and spices to a boil. Reduce heat to medium low and simmer for 5 minutes. Add the drained veggies to the pot and bring the mixture back to a boil. Reduce heat to medium low and simmer for 10 minutes. 

With a slotted spoon, pack the veggies into glass jars. Cover veggies with the pickling liquid leaving ¼ quarter of space from the top of the jar. With a damp cloth, wipe the rims of the jars and place the flat lids on them and them screw on the rings tightly. Put the filled jars in a canner and add more water as needed to be at least 1 inch above the jars. Bring to a full boil. Cover and continue boiling for 10 minutes. Remove the jars of relish and allow them to cool completely.

Go Big Bubbles

Keep the kids entertained for hours with this giant bubble recipe! All you need is a few standard household ingredients and your little ones will enjoy hours of outdoor fun.

You’ll need:

6 cups of water
1/2 cup of dish soap
1/2 cup of cornstarch
1 tbsp baking powder
1 tbsp glycerine

To make: 

Mix your ingredients together slowly to avoid getting too much air and bubbles into it. Let it sit for 1-3 hours to let it fully activate. Then just grab some bubble wands and have at it!

DIY Herbal Bug Spray

Nothing can ruin a fun summer night like getting bitten by skeeters. Try this all-natural bug spray recipe. All you need is a few fresh herbs from the garden and a few regular items from the pantry.

What you’ll need:

2 tbsp fresh mint (either spearmint or peppermint will work)
6 tbsp fresh herbs (catnip, citronella, lavender, etc.) finely chopped
1 cup distilled water (make your own by boiling and cooling tap water)
1 cup witch hazel, rubbing alcohol, or vodka
Glass spray bottle (stores better than plastic)

To make:

Bring one cup of distilled water to a boil in a saucepan. Add your fresh herbs to the pan. Cover the pot and remove from heat to let the mixture cool completely. When cool, strain your herbs using cheesecloth or a mesh strainer. Add 1 cup of witch hazel, alcohol, or vodka to your herb-infused water. Put the mixture into your glass spray bottle and store in the fridge. Use as needed to prevent mosquito bites.

Pudding Slime

Slime is super popular with the kids right now and there isn’t a house in America that doesn’t have a cubby full of glitter and glue. Here’s an easier (and cheaper) option to make toddler-proof slime that won’t hurt them if they sneak a nibble. 

What you’ll need:

¼ cup instant pudding mix
1 cup cornstarch
⅓ cup warm water

To make: 

In a mixing bowl, add the instant pudding and HALF of the cornstarch. Add warm water until the slime begins to form. Slowly add the rest of the cornstarch, stirring as you go. The slime will start to thicken and become stiff. Knead by hand until the dough is smooth. If it’s too stiff, try adding a little more water.

Grow A Grill Garden

The weather is warm and the sun is out! It’s grillin’ time, folks! Whether you’re grilling shish kabobs or burgers, herbs are key to adding a punch of delicious flavor to your meals. Plant a grill garden and enjoy mouthwatering dishes all summer long. Start with these flavorful herbs!

Thyme is the most versatile herb when it comes to grilling and works great with fish, poultry, and veggies. To successfully grow thyme, plant the herb in well-drained soil in an area that gets a lot of sunlight. Thyme can be planted with our next favorite herb, rosemary.

Rosemary is particularly tasty with chicken. The stalks can be used as tasty skewers for shish kabobs. Just like thyme, rosemary likes well-draining soil and oodles of sunshine. Be sure to give your plants room to grow as rosemary can grow up to four feet high and four feet wide.

Italian oregano is absolutely perfection when paired with veggies! Oregano loves well-draining soil and sunshine. For bushier plants, let your oregano grow to about four inches tall and then pinch or trim them. Regular trimming will increase branching and reduce legginess. When it comes to watering, water thoroughly and less often. If you’re container planting, water until it comes out of the bottom of your planter.
