You Will Need:

  • 2 cups all-purpose flour

  • 1/4 teaspoon ground cloves
  • 2 large eggs
  • 1 cup brown sugar (packed)
  • 1/2 cup canola oil (or vegetable oil)
  • 1 cup pumpkin puree (not pumpkin pie filling)

Cream Cheese Filling:

  • 8 oz cream cheese (softened)
  • 1/4 cup unsalted butter (softened)
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions:

1. Preparing the Pumpkin Cookies:

  • Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  • In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, ginger, and cloves.
  • In a separate large bowl, beat the eggs until well combined. Add in the brown sugar, canola oil, and pumpkin puree. Mix until smooth.
